Chicken Chettinad

Ingredients

Chicken - 500gms
Cinamon - small stick
Cardamom - 2
Clove - 2
Tomato - 200 gms
Onion - 200 gms
Ginger garlic paste - 2 teaspoon
Chilli powder - 20 gms
Corriander powder - 20gms
Turmeric powder - 1 pinch
Jeera powder - 10 gms
Pepper corns - 8-10 corns
Aniseeds - 5 gms
Curry leaves

Method
  • Broil cinamon,cardamom,clove,pepper corns,aniseeds and grind it.
  • Boil the boneless chicken cubes
  • Heat oil,add onions and brown it
  • Add Ginger garlic paste,turmeric powder,corriander powder,chilli powder to it
  • Add boiled chicken to it
  • Add the ground masala and tomatoes
  • Sprinkle water and cook till raw smell goes
  • Garnish with curry leaves

Chicken pepper masala

Ingredients
Boneless chicken -500 gms
shallots - 100gms
onions - 250 gms
green chillies - 4-5no
tomato - 1 small
pepper corn - 10 corns
coconut - 4-5 strips
corriander powder - 1 spoon
turmeric powder - 1 spoon
curry leaves
pepper
salt
oil

Method
  • Grind shallots,green chillies,coconut,pepper corns together
  • Heat oil,add onions,saute till it turns transparent
  • Then add pepper,salt,turmeric & coriander powder
  • Cook it till the raw smell goes
  • Add chicken pieces and saute it
  • Now add the ground mixture and also finely chopped tomato
  • Add water and let it cook for 15 - 20 min
  • Finish with curry leaves

Mutton snack

Ingredients 

Mutton

Curd

Red chilli powder

Corriander powder

Ginger garlic paste

Mint leaves,corriander leaves

Pepper,Salt

Oil

Method

  • First pre boil the boneless mutton cubes
  • Mix curd with red chilli powder,corriander powder,pepper,salt,ginger garlic paste and grounded mint and corriander leaves and one spoon of oil
  • Marinate for minimum 30 min in refrigitator
  • Heat the tawa and place the pieces one by one the tawa
  • Fry it individually (i.e) do not mix one piece with other.
  • Serve hot

Chicken snacker

Ingredients 

Chicken boneless 

shallots (small onions) 

ginger garlic paste 

corn flour 

maida 

curry leaf 

red chilli powder

salt,pepper

Method

  • Mix corn flour,maida,pepper,salt and chilli powder with water
  • This shoud  be thick batter not of dripping consistency
  • Add chopped shallots and curry leaves
  • Add ginger garlic paste to this mixture
  • Now add chicken to this batter and keep in refrigitator for minimum 30 minutes
  • Deep fry in oil in medium flame
  • Serve hot

Hi People

i'll write some of the recipes known to me or those i've tried.There's nothing right or wrong in cookery,when the food is lovely enough to eat then its a good one.I love to cook but only im in the right mood for it.I love to experiment with cooking,here are some of those.Its not going to be the authentic dishes its just the ones i've tried or known to me.
